I purchased this more than three years ago to use when making clear stocks and it has worked wonderfuly, it does not open and release the contents until you unscrew the cage. I add all my herbs and seasonings to the basket and simply hang it on the edge of the stock pot to infuse the herb flavors into the liquid. It is so much easier to use one of these than to try and strain the bits of herbs out of a hot stock. It has held up wonderfully thru lots of use and shows no sign of wear or rust after more than 50 uses. I would gladly purchase it again.
